Peanut Butter Chocolate Chip Snack Cake

With only 20 minutes of prep and 40 minutes of baking, this healthy snack cake is ready in just an hour!

Ingredients:

  • 2¼ cups gluten-free flour blend
  • 1 cup sucanat or coconut palm sugar
  • ½ cup honey and ½ cup 100% pure maple syrup
  • 1 cup all natural creamy peanut butter
  • ½ cup unsalted butter, softened
  • 1 teaspoon aluminum-free baking powder
  • ½ teaspoon aluminum-free baking soda
  • 1 cup almond or coconut milk
  • 1 teaspoon pure vanilla extract
  • 3 organic eggs
  • 1 cup Enjoy Life chocolate chips

For The Sugar Free Peanut Butter Buttercream Frosting:

  • ½ cup all natural creamy peanut butter
  • ½ cup powdered swerve sweetener
  • 1 stick butter, softened 

Instructions:

  • Preheat oven to 350 degrees and coat a 9″X13″ baking dish with coconut oil.
  • Using an electric mixer, combine sucanat or coconut palm sugar, honey, maple syrup, peanut butter, and butter, and beat until creamy and well blended. 
  •  Mix in gluten-free flour blend, baking powder, and baking soda. 
  •  Add eggs one at a time, mixing well after each addition. 
  • Stir in Enjoy Life chocolate chips
  • Transfer batter to prepared pan and bake for 35-40 minutes, or until toothpick inserted into the center of cake comes out clean
  • For sugar free buttercream frosting, combine all natural peanut butter, swerve sweetener, and butter. Beat until smooth and fluffy. 
  • Allow cake to cool completely before topping with buttercream frosting.
