Chocolate Mug Cake

This easy mug cake is a great choice for when you’re craving something sweet and simple. Original recipe created by Rachel Leighton.


  • 6 tbsp almond flour
  • 1 tbsp + 1 tsp cocoa powder
  • 2 ½ tbsp granulated sweetener (coconut sugar, monk fruit, stevia, etc.)
  • Pinch of salt
  • ¼ tsp baking powder (aluminum free)
  • 3 tbsp milk of choice or half & half (grass-fed)
  • 1 tbsp of melted butter (grass fed)
  • 1 egg (pasture-raised)
  • ¼ tsp real vanilla extract 
  • Optional: ¼ tsp almond extract if desired for a hint of cherry amaretto flavor
  • Optional: chocolate chips (Hu, Lily’s, EnjoyLife, etc.)


  • Combine all ingredients in a greased mug.
  • Microwave for 90 seconds. If the middle still looks gooey, microwave for 30 more seconds.
  • Top with more chocolate chips while still hot! Enjoy!
