Shopping List:
5 farm fresh eggs
2 tablespoons red bell pepper, minced
2 tablespoons onion, minced
3 tablespoons fresh spinach, minced
3 tablespoons artichoke hearts, minced
2 tablespoons coconut milk (or almond milk)
1 garlic clove, minced
1 teaspoon fresh basil, minced
salt and pepper to taste

Directions:
1. Preheat oven to 350 degrees.
2. Beat the eggs in a bowl and set aside.
3. Combine red bell pepper, onion, spinach, artichoke hearts, garlic, basil in a small bowl. Heat one tablespoon of butter in a frying pan and saute these ingredients for 3-4 minutes.

4.Add vegetable mixture to the eggs and add salt and pepper.
5. Brush melted butter around the edges and the bottom of little ramkin/souffle dishes and fill with egg mixture.

6. Bake for 20-30 minutes or until puffed and golden brown on the top.
