This recipe is delcious at any meal. Wonderful as a side or main dish, it's flavorful and easy to make.

Lentil Loaf

Shopping List:
• 2 cups cooked lentils (brown or split red lentils)
• 1/2 onion, grated
• 3 celery stalks, grated
• 2 large carrots, grated
• 2 garlic cloves, grated or minced
• 1 1/2 tablespoons fresh rosemary
• Salt and pepper to taste
• 1 farm fresh egg, beaten
• 1/2 cup olive oil
• 1 3/4 cup coconut milk (or regular milk)
• 1 cup bread crumbs (I used ezekial bread fresh, not dried, crumbs)

Directions: Preheat oven to 350 degrees and grease the sides of a casserole dish with butter. Combine all ingredients in a bowl and mix well. Bake until the top is golden brown, about 1 hour.

Tipoftheday • This dish can easily be made gluten-free by using gluten-free bread.

• Lentils are fairly inexpensive, especially when bought from the bulk section rather than pre-packaged.

• Split red lentils, which I used in the recipe above, are smaller and take a lot less time to cook than brown lentils, but they are both similar in taste.
