This recipe is one of the first that I tried when Luke had to undergo an extreme diet makeover back in 2008. He loved it. I loved it. It's healthy and really easy to make. I found the original recipe here, but changed it a bit to meet our dietary needs.
3 large ripe avocados, cut in half and pitted
6 tablespoons lemon juice
3/4 cup sour cream
1‑1/2 tablespoons grated onion
1/4 teaspoon celery salt
1/4 teaspoon minced garlic
Salt and pepper to taste
2 cups diced cooked chicken
1/2 cup raw, shredded cheese
Chives for garnish
Preheat oven to 350°F.
Sprinkle each avocado half with 1 tablespoon lemon juice and place in a glass baking dish filled with 1/2 of water.
Combine sour cream, onion, celery salt, garlic, salt and pepper in medium bowl. Stir in chicken and mix well.
Fill avocado halves with chicken mixture and sprinkle with cheese.
Bake filled avocado halves 15 minutes or until cheese melts. Garnish with chives.
This meal can be made in 30 minutes or less if you have chicken already cooked. I like to keep some cooked chicken in the freezer so that I can set it out the night before or a few hours before dinner for days when time is limited. This simple time-saving tip can save you an extra 20 minutes on meal prep!
