Roasted garlic can be rather pricey at the supermarket, especially organic. But, it's really easy to make your own and a great additon to many dishes or just simply spread over warm toast.

1. put 1-2 tablespoons of olive oil on the bottom of a pan (oven safe) and heat oven to 375 degrees.
2. cut off the tops of the garlic bulbs so that the top of the cloves are exposed.
3. drizzle garlic bulbs with olive oil well enough so that they won't dry out during cooking.
4. salt and pepper to desired taste, then cover pan with foil.

5. bake for 40-60 minutes (depending on oven). check often once you reach 40 minutes. when done, the cloves will easily come out of the peeling.
